Chocolate Chip Cupcakes
1 pkg. yellow cake mix (18-1/2oz.)
1 pkg. instant vanilla pudding (3.4oz.)
1 cup water
1/2 cup vegetable oil
4 eggs
1 cup mini chocolate chips
white or chocolate frosting (white is prettier)
extra mini chips to sprinkle
Combine cake and pudding mixes in large mixing bowl, add water, oil, and eggs. Beat on low for 30 seconds. Beat on med. for 4 min. Stir in chocolate chips. Fill greased or paper-lined muffin tin with 1/4 cup batter. Bake at 375 for 18-22 min, or until toothpick is clean. When cooled frost, decorate with additional chips.
Yield: about 30 cupcakes

1 box cake mix (any flavor)
1/2 c. finely chopped nuts (optional)
36 ice cream cones (flat bottoms)
1 can frosting (16 1/2 oz.)

*5 oz. superfine sugar
*6 oz. self-raising flour
*3 eggs
*1 tsp. vanilla extract
Instructions:

3. Crack the eggs into a cup and beat lightly with a fork
4. Place all the ingredients in a large bowl
5. Beat with an electric mixer for 2 minutes, until light and creamy
6. Divide the mixture in the muffin pan
7. Bake for 18-20 minutes until risen and firm to touch
8. Allow to cool for a few minutes and then transfer to a wire rack
9. Allow to cool fully before applying the frosting
